Reno Beef Enchiladas


Servings: Serves 6 people

1 lb grnd beef, cooked & fat
   drained off
1 onion, minced
2 cans chili pepper, diced
1 clove garlic, minced
2 pints tomato sauce
1/2 tsp salt
1 egg, beaten
1/2 lb cheddar cheese, grated
12 corn tortillas, soft
olive oil
red sauce
2 tsp oil


Heat 1/2-inch of oil in a skillet and fry the tortillas for about 15 seconds on each side, then remove and pat off the excess oil.

In a separate skillet, heat 2 TBS oil and saute the onion until tender.

Add the chili peppers, tomato sauce, garlic, salt, and pepper, then the grnd beef.

Simmer uncovered for 10 minutes.

Dip the tortillas in egg, fill with the sauce mixture, roll, and place in a shallow greased baking dish.

Pour the red sauce over the tortillas, top with grated cheese, and bake uncovered at 350 degrees F for 15 minutes.
