Polvorones (Mexican)


Servings: Makes about 36 Polvorones

1/2 cup butter
1/2 cup lard
1/2 cup sugar
2 large egg yolks
1 large orange
2 cups all-purpose flour
2 cups finely ground almonds


Preheat the oven to 400 degrees F.

In a bowl, beat the butter, lard, and sugar into a smooth, light cream.

Add in the egg yolks separately, beating well after each one.

Finely grate the orange peel, add in the batter with the juice from the orange, and then fold in the flour and the almonds. The dough should be a bit crumbly.

On a floured surface, roll out the dough 3/4" thick, then cut out 1-1/4" circles.

Place the dough circles on a greased baking sheet and bake for about 15 minutes, until cooked but still golden. They will still feel soft but they will firm up as they cool.

Store in an airtight container.
