Nuoc Cham (Vietnamese)


1/4 cup water
2 TBS sugar
1 fresh chile, finely chopped
2 small cloves garlic, chopped
2 tsp lime juice
1 tsp rice vinegar
2 1/2 tbsps fish sauce
2 tsp shredded carrot (optional)

Heat water and sugar until the sugar has dissolved, and then cool.

Mash the chiles and garlic into a paste using a mortar.

Pour in the sugar-water and mix.

Add the lime juice, vinegar, and then the fish sauce to taste.

Mix well and stir in the finely grated carrot.
