2 lbs. round steak, cubed
2 Tbsp. oil
1 lg. diced red onion
1 tsp. salt
1 tsp. chili powder
1 cup water
1 tsp. dried oregano
1 tsp. cumin powder
1 can (16 oz.) stewed tomatoes
1 clove garlic, minced
1 tsp. pepper
2 cans (16 oz.) red kidney beans,
Brown meat in the oil in a large pot.
Add the rest of the ingredients except for the beans.
Cover the pot and bring to a boil.
Reduce the heat and simmer for 45 minutes, stirring occasionally.
Skim off the fat and add beans, then simmer for an additional 30 minutes.
Note: This dish goes great with cornbread!
