1 lb 95% lean ground beef
1 medium onion, chopped
1 tsp dried oregano leaves
4 flour tortillas
1 medium tomato, seeded and
1 TBS thinly sliced fresh basil leaves
3/4 cup shredded light mozzarella
1/4 cup grated Parmesan cheese
Preheat oven to 400°F.
Brown the ground beef and the onion in a skillet over medium heat for 8-10 minutes or to 160°F doneness.
Drain away the drippings and blot with paper towel.
Stir in oregano.
Lightly brush the tortillas with oil.
Bake the tortillas on 2 large baking sheets in 400ºF oven for 3 minutes.
Spoon the beef mixture evenly over top of each tortilla.
Top with an equal amount of tomato.
Sprinkle cheeses and with basil.
Return to the oven and bake for 12-14 minutes or until the tortillas are lightly browned.
