Ingredients:
2 quarts water
1/4 cup lemon juice
1 cup non-iodized salt
1/4 TBS garlic powder
1/2 cup brown sugar
1/4 TBS onion powder
2 TBS lemon concentrate |
Directions:
Use small fish (or filets of larger ones).
Mix all the ingredients and stir until dissolved.
Brine the fish for at least 4 hours, then rinse and dry.
Rack and load the fish into a smoker.
