Crispy Fried Leeks

           Ingredients:           

Servings: Serves 6 people

Peanut oil
3 cups matchstick-size strips leeks
   (white and pale green parts only,
   from about 5 small leeks)
 

               Directions:             

Pour the peanut oil into a small, heavy saucepan to a depth of 1 inch.

Heat to 350 degrees F.

Fry the leeks in small batches until golden brown, for about 30 seconds.

Using a slotted spoon, transfer the fried leeks to paper towels and allow to drain before serving.
