Artichoke Balls

           Ingredients:           

1 garlic clove, minced
1 TBS olive oil
1 (8oz) can artichoke hearts, mashed
1 egg, beaten
1/4 cup Parmesan cheese
1/2 cup Italian bread crumbs
 
               Directions:             

Sauté the garlic in oil, then add the egg and artichokes.

Cook at low heat for 5 minutes, then remove from heat.

Add the Parmesan cheese and 1/4 cup of bread crumbs.

Using a teaspoon, form into balls.

Roll in the remaining bread crumbs.

Chill for 2 hours or until ready to serve.
